Dude, you are gluten/casein intolerance!
You had all the symptoms, and when you did your diet in college you were cured.
Carbs are different. The best carbs are from vegetables tubers: potatoes, carrots, beets
Then seed/legumes
but wheat or anything like it (such as barley) is SHIT
To answer your question, gluten FUCKS insulin and glucose metabolism. It wasn't the fact that you ate no carb, it was the fact that you had no gluten or casein in college. As far as what it does to the liver, there is too much information to give it all. I know you're not happy with my answer, but the best way for you to understand the difference is to do some research. I could do it for you but it takes hours if not days.
Also, Txacoli said that your problem is cause by candida. I have reasearch candida and to summarize what I found is: NOBODY KNOWS WHAT IS CANDIDA. But if you are gluten intolerant, then you probably had candida.
I believe that candida did not cause your problems. But candida (or your bad acne) was as symptom of not being able to digest gluten.
Also, if you read about candida, they say the only way to cure it is to not eat sugar of any kind, not even in rice carrots or potatoes.
And that's just fucking stupid...you will feel like shit if you do that diet, I try it
There are a couple of people how mention how they went on a rice diet and cured their candida, so its not the sugar...it's the gluten
besides, everyone has candida in their instestines. It is natural.
I think the body reproduces candida to help fight the gluten molecules...I could be full of shit on that one but not even scientist have decided why does the body makes more candida...

If that works for you, then great!
But before you jump to that conclusion, try it for at least a month. You have only done it for 4 days which you shouldn't feel at all awesome, in fact you should be in detox mode...4 days will not make you have the awesome feeling I am describing. After a month, you will understand what I mean by AWESOME. and after one month, if you do eat pie or bread or milk, you will see what feeling like SHIT really is

the only way to prove your family is to do the diet. After a month, if you haven't die, they will believe you haha
I tried with my family showing them numerous article, including scientific articles, but they won't believe it until you actually do it
And if you're looking anerextic skinny, this should at least make you skinny but looking "healthy"...not super scranny
