This is how she replied:
"You definitely do sound interesting, unusual people are always much more fun to talk to. I would imagine we could have an amusing time talking in a coffee shop, I'd certainly be up for that. So what would you say is the most out of the ordinary thing about you?"
Perfect, your opener worked. You wanted to capture her attention and interest and you have done that! She even says she'd be up for potentially meeting you which is a great sign. Basically, now we just have to go into our DHV short stories at this point. She's inviting them by asking you a question. She wants to learn more about you so tell her.
Also, you put up a hoop for her to qualify to you. She redirected and put up her own hoop. You can do one of two things. You can not reply to her which would be a tragedy, or you could ignore it and say what you want. I'm not saying do an essay on the most out of the ordinary thing, but tell her soemthing you want to tell her.
Go into a short DHV story. By short I mean about a good paragraph or two that will also convey other things to make her attracted to you. Same as you would in person, however, we're just using email as a medium.
You got her hooked, now just reel her in man.
