Need advice with this girl

So I've been on two dates with this girl who is super confusing. We met online, chatted everyday, I gave her a lot of negs and she was into it but she only dates older guys she says and I'm a year younger. She kept trying to shit test me. Like every day was a shit test. She even talks dirty and then retreats and says she's a good catholic girl. Then we go out and she openly tells me she likes me more than she expected.

She agrees to a second date right there. Between the first two dates she's lagging in her replies to me (she's a short texter in general), so I leave it and she texts me the next day saying she just wants to be friends she's not in the frame of mind for a relationship. I say I don't know that you can be just friends with me given how you feel. She says she still wants to go on our second date. On the second date she tells me she's scared how much she likes me and that she's worried I'm secretly a serial killer, that I'm too good to be true. I remind her of her exes who all wound up being assholes. And she's very independent and guys aren't always okay with that So she wants to take it slow. But she's telling me about if we moved in together, how she'd wear my clothes etc.

Two days later I invite her to this film seminar I'm going to but she says it's not her cup of tea so I stupidly say oh okay we can do something else. And she says no I feel bad I can do that. But then suggests I take my niece. She texts me later saying she was just in a mood. I said I'm here if you need. I let two days go by. I sent her a good morning text and we start talking. She's telling me she's still in a mood because of something that happened with her close female friends it's really bothering her. We talk about that for a while and then i ask what she's up to Sunday. She says not sure yet why. I said cuz I wanted to go to dinner. She never replied.

I don't understand why she went so cold. I'm not sure if I should ignore and move on, ignore and if I want re-initiate, give her the benefit of the doubt since she told me all this stuff that's making her "question who she is", or, I know she likes strong guys and has voiced she's worried I'm too passive, I thought I'd see if she's feeling better and just politely let her know in the future if she's busy or can't make it let me know but to not reply won't fly with me in the future. Not sure what the best bet is here.

Oh and idk if it matters but she said apathy is the thing she hates most in a guy. My Sarging buddy thinks I should continue to text her just less so and less invested.

What the hell does being independent have to do with taking it slow anyway?
You've been on two dates and this is the baggage she bring? Moods, weird confessions, questioning who she is? And who thinks relationship after barely two dates?

She also said when she falls for someone she falls hard. So idk why she's being hot and cold. So you're saying she's not worth the time basically
