I wouldnt use information as that as escalation.
Id just show her Im comfortable talking about sex and that it doesnt phase me in any way.
Im not telling you to be logical about the situation, but rather playfully just talk about the topic she pressented you.

Escalation cant be done over a phone.

Escalation isnt done through words at all!
Its done through eye-contact touching and kissing. Nothing needs to be said.

But depending on how comfortable you are talking about sex with a chick she can get a feel for how experienced you are and if you'd be able to handle her.
