I've been out of the dating scene for far too long, obviously.
So here I am, decided to come ask guys for some advice.

I'm 34, attractive and well educated. Due to working an extremely hectic schedule, I've basically become a born again virgin...NOT good at all. The dating scene has changed so much and I'm kinda stumped on how to even conversate with strangers.

It's easy. Presume every guy has his eyes on you in the room then choose a guy and let him know you're interested. If he's even half a man he'll approach you or a friend.

The easiest way for a woman to get a guy from what i've seen is just to grab a random guy on the dance floor and dance with him. It's actually that easy for women.
