Don't get me wrong, I'm crazy about this girl, but how do I handle this? I'm not really wanting to say this back just yet. But I feel like not responding in kind would feel to her like a huge rejection, and I don't want that to happen either.

If you're really into her but feel like you're not there yet , I guess you could say it back regardless. Only if you feel like you're gonna get there relatively soon though.
Also girls rarely say it before guys do no matter how much they feel it. They will rather hint towards it than come out guns blazing.
