how much calories/protein are in.......

a bowl of homemade vegetable soup(does include can tomatoes)

potatoes with roast-potatoes usually usually cooked with a roast and sometimes carrotts

Home fries-whats wrong with occasional deep fried potatoes if they are cooked from raw potatoes and not a bag of french fries?

These are some main foods my mother likes to cook. I just would like to know how much calories/protein would a serving contain?

I want to start working out as soon as possible and as soon as I can get a hold of some weights if a gym is still out of reach due to travel concerns. And I plan to balance home cooked meals with stuff like tuna, eggs, turkey, peanut butter(natural), FF(there's a free trial). Maybe wheat bread or maybe none at all( can't stand the taste).

Vegetable soup has very low calories as most vegetables have low to non calories. As far as potatoes goes if you can you should only eat them after workout or jogging. There are too many things to explain but for now you can check out http://nutritiondata.self.com/

they give you all the nutrition data (calories, protein etc..) you need to know.

But its a combination of different vegetables. Its mainly frozen stuff like carrotts, beans, corn. I would think I could get maybe 200 cals combined out of it.

And stuff needs to be cost effective as well.

Yes, each gram of fat you consume provides more than twice as many calories as a gram of protein or carbohydrate!
As an example of how these numbers are used, imagine a food containing 10 grams of protein, 10 grams of fat, and 10 grams of carbohydrates. That would total 170 calories:
(10 g protein x 4) + (10 g fat x 9) + (10 g carbs x 4) = 170
In this imaginary food 40 calories come from protein, 90 calories come from fat, and 40 calories come from carbohydrates.
