Ok so I deleted this girl after she didn't respond. Yesterday I received a poke from her.

Just ignore her. Let this one go, bro. There's plenty more out there. Even if you did manage to get her number and talk to her, she sounds like the type that is very flaky. Especially since she just disappeared after a couple of messages. You can pursue her if you want, but don't get your hopes up.
