Well I can try and help you for next time before we worry about this scenario...

1. When she mentions her ex or whom ever, you don't give a shit, because you are the type of guy who just hooked up with a girl 5 mins before you entered the coffee shop, you are the prize not her. You can't begin to think oh no I lost her shes talking about other guys... So what can you do?
a. Make fun of the scenario - Make fun of him and her decision to go with him -playflly of course
b. Relate to it - try and get out of her if i was a good or bad hook up then tell a story about the craziest or worst hook up then change the subject

Remember its not about him its about you, so what ever you do make her like hearing about you, by the end of the date she should be thinking "Wow this guy is really fun and I like him..." You should be thinking, "I think she deserves me, yea I ll go for round two" Then say... "I really had a good time, then say I am having this party this weekend" or " I am going to this art show" The possibilities are endless.

Now back to the matter at hands... This girl!

The moment you said I am not bad looking guy... shows you have confidence issues. You shouldn't even need to think twice about if she is attracted to you or not. BRO you just went on a date with her... (please don't do coffee shops, f you do at least dont sit across -try and sit round tables- but yea you can have like mini dates and coffee is one of the stops) She clearly is attracted to you if she went on a date, regardless what I think you should do is be like I think you owe me another cup, make it playful, shell ask why and you can say... well you said that crazy thing (you said she talks a lot theres bound to be one thing that surprised you) and I burnt my tongue so I never really got to enjoy the rest of my drink.
