There's a girl in my lecture class who sat to the front left of me:
Her X
X Me
and I talked to her in our lab a little and she ended up asking my name and then she told me hers.
Shortly after this interaction she has started voluntarily sitting directly in front of me (the past 3 classes or so). Should I think anything of this?
I also got her number recently by just plain asking her for it in case I need homework help and I'm wondering how to go about starting a text conversation.

Sure, this is a IOI :-)
Ask her out for a date.

Any ideas on how to get a text conversation going? I'm thinking starting with a class related question then moving on from there would be a good way to go...

mate youre in uni just say something to her about the class you took.

say something like " shit this is hard , wish i took drama"- i know this isnt amazing but all its meant to do is get your foot in the door.

from here ask her about the other subjects she took and then when youre about to leave , say after 3 mins or so , just say

YOU - " ive gotta get going but it was good to talk to you"

HB - "BLA BLA BLA "

YOU - " hey do you have a phone ? give me your number " and hand her your phone.

easy peasy man.

Yup Cableguy, you're getting IOIs. Consistently sitting near you is proximity, she gave you her name and phone number, which is compliance.

Text her absolutely anything. Just keep it short and sweet, if you want more of a conversation, do it on the phone, or wait til you set up a D2. As for texting, there's loads of material in other threads. Personally, I wouldn't text her regarding school, I would opt for a more interesting/attention-grabbing opening for a text.
