but i guess you could always add it up in your head while eating and if it is more excuse yourself to the bathroom and then pay the extra to the waiter...

For starters, you don't want to be going out for dinners (especially expensive ones) until you're either in a relationship or are confident that's the direction you're headed in with this girl. If so, GQ did a little write-up on this (BTW I think every guy should read GQ - regardless of your age or style, a lot of the stuff in it is universal), and I've used it for dates or just dinners where I want to pick up the tab and not make a big fuss:
In advance, give the waiter or the maitre d' your credit card, and tell them to add 20% (or whatever is a solid tip where you are) and just bring you the receipt at the end of the night. You've got to trust the place you're at, but I swear by this. It helps avoid looking like you're putting on a show by paying, you still look like a star, and you get great service the whole night. It's a cool feeling when you get to walk out of the place like you own it...
