I've been talking to this girl on myspace and have been texting her for a week. i told her that we should go grab a cup of coffee on a text message (afc move) and she said " yea def.!!" (IOI?) She comes back Sunday and set up a day two but she already has a BF. What should I do?

I think the "Yea def!" is either a ioi or you're just way out & u're seen as a friend. You know which of the two it is.

#1 if she wasn't interested in you, she'd probably find up reasons (excuses) why she can't come.
or
#2if ur just friends( to her) then it woud just be real fun to hang out.

This is what I would do:
If u really want her, you gotta ignore that fact that she's got a man, you can't let it get in the way!
You should be the one setting the day, time, stuff. If she does, change it.
ex:
girl - how's 2 o'clock?
you: 3 o'clock's better

Thus, you don't seem too eager and you're making the decisions (you can't be available all the time us guys are busy people). This is obviously if she tries to set up a meeting time.
ideally you always wanna set the meetings yourself

girls wit bf are a challenge, nice challenges of course, and if you believe you can take his place, go for it. It might work out, it might not. Only one way to find out!

i'm thinking of sending her a comment saying- i heard your shy at asking people out, should i make it easy on you and plan something for tomorrow? what do you guys think of it?

Since she said yeah then it could mean she does want to get to know you and blah blah. Maybe her boyfriend is a douche bag and her friends don't like her boyfriend either so it could mean she is trying to check her possibilities at guys that she knows, thats where you got to step it up. Game her as if she didn't have a boyfriend and remember to just have a good time.
