People who are paid to be nice to you or are working on customer relations so she can get tips can make it difficult to judge what she's really thinking. Women are already masters of manipulation and when shes a bartender or stripper , for example, I'm always watching to raise the subconscious BS flag on her.

I've been to a particular bar several times in my hometown though I don't live there anymore. The HB7 I've had lots of infrequent fluff talk with seemed overly excited when I told her I was moving back in town for a few months and would be there more frequently. (Big smile) "that's great!"

Ten minutes later after pouring a few drinks for other customers. "glad you're comming here more often. How exciting!"

I didn't know how to react because of my doubts if her emotions were real or because I'm a good tipper. She's a genuinely nice person but is ALSO programmed to be nice for monetary gain.

Any advise on how I would go about testing her maybe?

Well the obvious answer is not to treat her like everyone else.
When you move back and start frequenting the bar more, be less generous on your tips for a while and see if she treats you the same. If she says something just make a mention about how moving hurt your wallet or blah blah. If her attitude towards you changes then you have your answer.

If it doesn't then she could be genuine, I say could because it's not always the case.

They shake their tits for money, this indicates that they have low morals. You really don't want to get caught up in their shit too. Im pretty sure if you looked hard enough you could find girls ten times hotter than strippers with morals. Plus you really don't wanna know where strippers have been. Bartender on the other hand is probably a good target. Also has someone been listening to alot of t-pain lately?
