Like a lot of beginners, I feel confident and ready to approach and open all up until it comes down to the moment you have to do it.

Today was the first day of uni and in one of my classes these 3 HB8.5s sat in the row in front of me and my friend. How would one open these girls? It feels awkward to open from behind them or tap them on the shoulder.

Most of opening is not so much what you say but how you say it. You can really say anything to them if you say it the right way. Make a funny comment about the professor. Run an opinion opener relevant to the class or the environment.

You wanna get to the point where you do this shit naturally. Best way to get there is approach and open everyone. Hot women, old women, bus drivers, shit even your mailman. It will get you to be so naturally sociable, that opening isn't a matter of how you do it, but what you say to get the outcome you are looking for (ie pickup).

in a situation like that i would probably make fun of the teacher or something. or wisper about the homework. joke about how you thought it was pointless.
another thing you could do is ask her if shed rather take a nap now or later. that will probably get a giggle out of her and then u can take it from there.
one youve built a little bit of rapport you could even do like a little note pass to her and be like "hey whats up? " in the note. and when she looks at you like "wtf?" you go "shhh" and put your index finger in front of your mouth to make sure she keeps it a secret
they love cute shit like that.
