Here's what I would do. Find something that you want to do, like going clothes shopping FOR YOU, and invite her along. Don't do the whole "Do you want to go see a movie tonight?" No, you are a busy guy, you have things going on in your life and you wouldn't mind making her a part of it. If she says that she can't go, so be it, you're going anyways... or at least let her think that, during the time that you're supposedly busy, don't answer your phone or anything, you are busy. If she does come along with you, you could always build on the mall thing very easily, by grabbing a quick bite to eat or something, just don't go dropping a ton of coin on this chick.
Shopping? Mall? Spending money? Well, you could tell her that you need to go to the mall to go shopping and see if she wants to come. That doesn't mean that you need to buy anything. You can have her come and invest her time. You can have her pick out outfits for you, you can neg her on some of her choices, if necessary. At the end, if you haven't bought anything, you can use the "I saw a bunch of things that I like, but nothing that really popped out at me, nothing that I could really justify spending my money on." IMO, this is a DHV because it shows that you are selective and that you just don't go blowing your money on a bunch of crap.
By the end of this basic "date," you have spent a considerable amount of time with this chick. This has given you the opportunity to learn things about each other. You should be bantering with her. Tell her that she's your personal fashion advisor and that you are a celebrity (movie star, Donald Trump, who ever, just pick one). You, as a celebrity, are going on some trip, somewhere, and you need your fashion advisor to pick out clothes for your trip.
