I've taken a girl out once, i have some comfort/attraction with her but never progressed to close the situation. I went out with her a while ago, how's best to set it up again without lowering my value and giving her the opportunity to say no?

how long ago is a while ago. if you went on a date weeks days or months ago, its a big difference. it also depends on how much fun she had and how attracted she is to you, that will decide how long you have. just tell her (mystery) she has hijacked your mind, you went shopping and got upset you didnt know what she likes to drink. once you get on that conversation, tell her you are going to the store to get a new shirt, shoes, hat. it dont matter, you dont even have to get it, just tell her you would like a female opinion. girls love helping guys go shopping, even if you dont get more than a shirt, say (while there) you were trying to get a female opinion on outfits to get at some point.
