My text game isn't great, I end up asking generic questions like hey how are you? how was your day?, or what are you up to? I'm worried she is going to lose interest.
plus how should I ask her out on the second date? how long should I wait? should I text or call?
sorry I know i'm asking so many questions.

If you two are still getting to know each other, you should use the periods when you aren't seeing her in person to get to know her, SPAM/facetime calls are a good way of having a more personal experience rather than text but does avoid the awkwardness of real life. If those video calls are still a bit awkward phone calls are still a viable option.
And texting should be how you would talk normally to other people, being yourself is so much better than those generic questions you listed, and it gives her an insight to who you are. Also texting should be a platform for you to set up meeting times, gaming in real-life is so much more effective than through a mobile phone screen.
