In all honesty, it sounds like she was just being helpful and answering your question with a quick "today".
Given that situation, i probably would have said "k thanks, woa, i gotta get motoring", then open her with a new question, something that would make her turn around and face you, because her back is to you now.
-ask her a question about her project, then there is common ground, then you could even neg her project (if needed, dont think so though) as an indirect neg at her.
-or maybe approach her after class, cause you cant get that much accomplished in a classroom anyways.
