I know this is pretty anti-climatic for this forum, but the girl I had my eye on is not available. Still, from the small fraction of personality I have seen of her, it seems like she'd be a good friend.

Since the only time I really see her is while she's working [Barista at Starbucks], how do I go about starting something platonic?

I feel like if I asked her for her number or to lunch, she'd take it as an intent to pursue something intimate.

Please give me some tips here for something strictly platonic.

Ask her to come out with you and your friends. Say something like "Hey, my friends and I are going to {someplace}. You should come I'll introduce you to my friends they are chill... just don't embaress me. :P
