| I'm living in Germany, and I'm slooowwly getting familiar with German girls. This might be a generalization, but I find that Germans tend to be a lot more literal, so your game has to be simpler and more to the point. I've also found that physical escalation and cues (IOIs, etc.) tend to be more consistent, although German girls are much more shy about making eye contact. I've only f-closed twice here, but I've been out with a number of girls - it's a little harder to get things going at the start, but once you build up attraction and comfort, things can escalate pretty quickly. Anyhow, Ezoghoul's point about using more body language and physical cues is definitely the first step, and I've been forced to get much better at this since I've been dealing with German girls.
One advantage you have is that you are the host. You're the cool local guy who can guarantee that she has a great time. You know about the culture, you know the language, and you know all the places and things she wants to experience while she's there. The better you convey this, the more she'll be drawn to you. Just do this subtly, without seeming like you're volunteering to be a tour guide; make it sound more like "I'm an Australian that does Australian stuff, and you can tag along to see what it's really like".
As for building rapport, I can say from first-hand experience that a lot of pick-up techniques WON'T work - stuff will fly right over their heads, especially if you're using canned material. There's a culture gap and language gap, so if you try something like the cube, it'll take you 20 minutes just to explain what you mean, and then she still probably won't totally get it. Again, German girls are a lot more literal, so avoid getting too abstract. I find it's a lot better to ask lots of questions and find out things she's interested in, and focus the conversation on those things. If she's into surfing, diving, dancing, whatever, keep the conversation there and when possible, explain how she can enjoy some of those things in Australia.
