I asked out for day 2 the other day and she agreed, I get a msg today saying some kind of family party came up and she would take a rain check on that...

How should I respond?

I would not bother to say anything to her. Instead after a week or 10 days if I want to ask her out then I'd do it and not mention about the flaking part.
