Since I had my phone at home and I dont know my number, I asked for a pen and a piece of paper and used her shoulder as a desk (kino?) she gave me her number and I told her I would call her by 3pm.

Now my mind is racing :"What if she flakes me?" , "Is she interested?" , "Why would she accept my invitation, just to flake me and feel better about herself or she was actually interested?"

chill out. just text her without the paranoia and just assume she is interested.

Just ask her what time she is free and just plan the meet.

Your mindset is all messed up. You shouldn't care whether she texts you or not. This is a mild case of one-itus. Forget about her, text her, she is either interested or not. Nothing you can do except try. If she is then close the damn deal fast.
