I went on a date in a nice hotel bar on Monday night. There was only one bartender and she was a HB10. She was the only person there besides me, my date, and this old drunk at the end of the bar.

The bartender was flirtatious w/ me the whole time. She asked what was going on between me and my date?...."So what is up w/ you guys....are you friends, dating, on a date or what?". I simply said we were on a date and met a few weeks ago. The only opportunity I had to grab the bartender's number (just the two of us alone) was when my date used the bathroom, and I did not get it.

The bartender only works Monday nights, and it closes as Midnight. What is my best strategy for stopping back by the bar in the future and getting her number?

Just go and get her number. Don't wait for any special ocasion. There's no such thing.
She already showed some interest in you..
