Insta date Success need advice when to contact next

I met a girl yesterday evening at a networking event.
Several guys were all over her. I had great convo with her then I isolated her and the AFC sharks kept interrupting. One took her away and then she came right back to me. I bounced her to a sushi bar down the street for more great convo and flirting.
Positive thing is I built confort and rapport but I am frustraded since I did not escelate her and test the limits like I usually do towards the end. I just did not want to risk ruining this since I just met her and she is cautious since she is just divoriced. She mentioned this and I could sense it. I think she would of turned finicky and closed off.

Three times she said she could go hangout with me and said I would prob not date her. I think this was her sh1t test. I said well I just met you and I can tell you are a great person you remind me of a younger relative or a great friend I have know for a long time.

When should I call her and should I text her today a inside joke flirty text? I do not want to wait too long where the rapport fades.
I tried to set a time to meet again but she told me to call her this week to set something up.

I been out of the game for awhile and am rusty need some advice how to run this.
