Me: 7.30pm "what are you doing tomorrow?"
Her: 8.30am following morning "hey I just woke up how r u?"

She's ignored the question. How do I call her on this without seeming like I care?

You don't need to call her on this. Not every interaction is a test. This is a good example of when to ignore them.

In this situation, I might be inclined to reply with something super random, as long as it will make them smile or LOL. eg: Morning, Hey random question, would you ever do Latin Dance Classes?

I used this line today to keep a text conversation moving along. I was working towards a Day 3. I have a really sarcastic nature and I'm really playful. Chicks can sense if you're relaxed or not.

And yes dinner for tomorrow was secured!!
