i asked a girl out to lunch, she said yes and gave me her number. We have texted back and forth a couple of times and it's been a few days since I've asked her out. Is it possible that she said yes just to be nice, and if not how can I tell if shes actually interested?

I get straight to the point here, delete her number and move on. There is no reason to get hanged up about this girl and why she blew you off. If she was interested you would already had lunch with her.
