I want to practice talking about a bunch of new topics online before I use them out on the streets face to face with live girls.

They are so different I'm not sure routines and convos you practice online would translate to live and vise-versa.
It seems the important thing online is to stand out and be different. Make stupid subject lines and messages in your emails, hit them with crazy IM openers, anything you can think of that's really wacky and funny. Doesn't matter if it doesn't even make sense. You just gotta stand out from the billion 'hi sexy' messages she gets every day. Something that will make her stop and laugh and go wtf? seems to be the way forward. They are the only ones getting any responses for me. Even if that is her exact response - 'wtf' -at least it's a reply.
Online a smiley and a straightforward 'hi' will get you absolutely zero response, but live just smiling and saying 'hi' can really work, I mean it's guaranteed at least a 'hi' back as a response. And saying something really wacky and silly live often just makes her think you're weird, but online she's like 'wtf haha who are you?'
So in my opinion they are so different you can't learn one from the other, it's not like poker lol. But as said I am new around here so I'm sure the old timers will have much better advice.

However I must point out that if you're serious about meeting these girls you must be congruent, you must make sure your online persona reflects the real you. I think you can get away with slight exaggeration but nothing more.
If you want to practice real life face to face stuff then just do it real life face to face.
The only thing I think is useful online is real time chat as it certainly keeps you on your toes and tests your improv skills. It's really hard to run scripts on people and improv helps. I've had loads of chats online where stuff I've tried to steer the conversation to has been ignored while other stuff has been picked up on
