I've done some in-field videos, and experimented with this. You pretty much have to get someone to follow you with a camera. This you pretty well know. It's very difficult to do it yourself.
I've used my camera and a hidden camera rig as well. The hidden cam obviously works out better. The other is tougher especially during day game because people are going to notice what's going on, and start to ask questions. At night game you don't have that happen as much. Still people standing around tend to start to notice things after some time, you just have to be ready for those questions.
The only advice I can give you is setup your rig the best you can to draw as little attention as possible. Place it in a bag, backpack, man purse, or on your person if possible. Have the camera guy stand at angle to you and not directly at you in order to not draw too much attention. Have them move around. So it doesn't draw as much attention.
When possible set the camera down. One I had in a man purse type of hand back we'd sit it down somewhere so it'd get you a better more stable shot. For example the guys would sit it down somewhere in a store to get the shot, while looking at the merchandise.
The pro's use multiple cameras and splice the films together to not draw as much attention. With one camera that's pretty much impossible.
