maybe you possibly learned from someone with a high pitched voiced? I noticed when I was learning italian, I had 2 major teachers, the first was a male who we all thought was gay and the second was a woman, and although she didnt have a manly voice, it was alot more respectable. i realized my voice when speaking (not my actual language skills) was alot better with the woman.

Also, I'm currently teaching myself japanese, and the guide im using suggest listening to 100,000hours of japanese. Music, news programs, movies, audio books, anything, as often as possible. You don't have to understand or even activly pay attention. Just hearing it builds recognition. Maybe try listening to Italian by men, and try to emulate them.

Pick an Italian actor whom girls would be attracted to, and watch him over and over. Speak along with him, and emulate his tone. I speak English, Spanish, and some French, and I realized a while ago that my tonality in Spanish and French was much less confident than in English, my native language. I've made a conscious effort the change that, and it seems to help, although I don't get to practice them in a pickup setting very often.

either youre nervous about the content youre trying to communicate cause your skills in italian arent solid enough or the other answers are probably accurate. my native language is german and i have trouble with my voice there
when i speak english on the other hand my voice is deep and resonant, because i have strong impressions of american actors from all the movies i watched. i was recentely in london with my english class and theory seamlessly became practical. actually i felt like my entire personality changed a little everytime i spoke english in real situations, in contrary to just practising with fellow germans. so take the advice by brianjtarr, find italian actors, news anchors, whatever, with great voices, listen to them and get into a fitting mindset when speaking yourself.
