She admits she ultimately wants a boyfriend out of me. Since this, I have only seen her once last week and she has become distant.

Seems that once you aren't good enough for just a hookup then either I'm doing something wrong or she is comparing me to another guy for that boyfriend candidacy. Keep in mind she never goes out on the town or anything so big dates and shit or social value etc. Aren't playing a huge role here.
