I'm all about keeping a relationship fresh! Try to be spontaneous and surprise her with shit that's out of the norm.
Here are some good ideas:
Creative Artsy fartsy shit: (pottery painting/making, painting, art classes, cooking classes) - ok this may feel "gay", but all of us have a creative little kid inside of us. Take her pottery painting or even set up a pottery making class together. Or they have wine and paint nights that may be fun. This will tap into both of your creative side even if you are not so hot with art. She will see that you comfy in that environment - win big points for potential care giver for her offsprings!!! Because one day you will have to take your kids to this type of shit.
Friendly Competition: (Go Kart Racing, Arcades, pool, bowling) - getting her to a mode where she wants to beat you at something can be good. She'll see a confidence from you when you play her.
DO NOT GO EASY ON HER. Beat her at all cost and get her rowled up - this is what FUN is to her.
Learning: (Museums, zoo, aquarium) - knowledge is power. Learning new things will empower the both of you and open new doors to creative, intellectual conversations that will enhance your relationship. Ever been in a relationship that becomes borring where there is nothing left to talk about? Well here is your answer. Women love weird and interesting facts about science, history, space and time.
Social events: (Street Fairs, Festivals, Music events, conventions, dancing) - This is a no-brainer and women find things like this flat out fun. Women love social settings because it gives them a chance to be a part of the social world, enjoy the music, being in the sun, enjoying good food and people watching. Show that your comfortable and confident around vast amount if people. I once spontaneously took a girl to the gay parade in San Francisco - It was so flamboyantly gay, but she loved it because she saw that I was comfortable being around gay people, and gave both of us a chance to experience something new and totally out if the norm. I have to admit I had tons of fun and she loved me that much more after that.

These are only a few to name...but I hope it helps. Just rememeber, make sure you have a good sense of PLANNING. You don't have to tell her that you've been planning something - act as if it's spontaneous - and the fact that your surprising her with someothing out of the norm, both of you will experience a fun spontaneous emotional time together.
