If it's your job to build up her self esteme [sometimes girls get it from other things, not their boyfriends] then do so! But I'd start by telling her you think she has a nice body... say something like:
'I would be going out with a different girl if I thought you were fat'.
The first part 'I would be going out with...' indicates that you have options.
The second part will make her happy.
It's almost a neg! :D
