In the interest of maintaining a fun and playful relationship, I was thinking about pulling a prank or two on the GF, but all of my best ideas are much better suited towards guy friends. Anyone have any good ideas?

If she's gullible, make up overly dramatic stories that happened to you.

If you plan on playing a prank, only do it in private. NEVER embarrass her in public.
