I guess it's the cat-string theory at work. Once someone displays interest, I lose interest. This changed when I met my last girlfriend who I was completely infatuated with, but I was so needy and clingy in the relationship that I drove her off. This brought about a need for change within myself, and I've dedicated myself to becoming a PUA and moving on to getting the women I want.

Look, in order for you to be togeather with someone, she must like you; meaning that she must have emotions. You just have to analyse yourself and find the reason to why you stop liking women when they begin to like you (they may be too needy; not too good looking; giving in too easy; etc).
But welcome to the world of PUA =). If you manage to attract a real HB10, then I really hope that you don't stop being in love.
Finally, if you don't have any problem with attracting women, I suggest you to read Double your dating by David DeAngelo, since he's not as much into routines and stuff as Mystery is.
