Unique Situation - Received Message out of Left Field

Post subject:  Unique Situation - Received Message out of Left Field
I am studying a semester in China. I got an email yesterday from a girl I haven't known very long. I once casually flirted with her via text and we made plans to hang out one on one, but I was too busy (visas, enrollment, leaving work, etc.) and it never happened. Another important point was that at this time she was in a long-term relationship.

Fast forward three months, I wake up and find this message in my inbox:

*THE MESSAGE*

"Hey man. I miss you a lot. I'm really sorry that I didn't get to say bye. I hope and know your having the best experience ever right now. I miss yo face. Anywho, give me an update please and thank you. Better yet, give me your address and I will send you something cool as often as possible!!! But yeah.
Love and Life,
Girl's Name"

A little background about the girl. She's college aged (like me), she's a hippie (if you hadn't already guessed), and she recently got out of the long-term relationship.

I think she's interested in me, and that this is something I can take further. However, I have two months left in China, so immediate physical action is not possible (or even desirable, I'm having a blast here). Lacking that, I think that frequent communication might get me thrown into the friend zone, since I can't escalate.

So I want to know what you guys think. If you agree that there seems to be interest here, and if so, what course of action you suggest.

TL:DR - Read *THE MESSAGE* and tell me what you think.

Thanks for offering advice, but could I get the reasoning behind your conclusion? It seems odd that a good looking, highly outgoing girl that's looking for a rebound chose someone who lives 8,000 miles away. That said, I think you're right that I shouldn't get too affectionate in my reply.
