Simple way: ask things. bit AFC
my way: when talking about her day or whatever, focus in on something interesting. If there isnt and she says something like "nothing much happened today" tease her about being boring and not having a good time then follow that with a DHV story about what you did today (and ffs make it insteresting.). That should spark convo. It it doesnt then follow up with something like "so honestly, ur life cant always be as boring as it was today
what was the last really cool thing you did?" hopefully, she will say something. Then focus in on it.By focus in i mean to like pick about bits of it, ask about it, open questions (question that require more than yes no answers). Then once ur talking about that try linking it to emotions (women always will talk about emotions, ALWAYS.) then once your onto emotion, try to link it to other experiences she has had. Either by asking her about other times she felt like that or talking about times u felt like that.

Summery! Ask ----> focus in (that means listening) -----> link it to emotional feelins of that event -----> change subject to that emotion ------> find out about other times shes felt like that.
