first of all, you are still young, so your personality is still a work in progress. you probably have dreams/ambitions for the future, but are extremely open to changes/experimentation. you still have to lie the foundation of your life. so don't expect to get philosophical about the meaning of life and the universe It's just I cant think of anything to ask or that I would REALLY want to know.

two, if you had some serious major topic that you wanted to talk about with your GF (her fears, where she sees herself in 10 or 20 years, her views about religion, ...) you could sit down with her one evening and declare a "no-sex night". spend the whole night talking, asking questions and conversing about topics. no interview style though. the convo should flow naturally given an initial input and some lane changes every once in a while. if you want to steer your relationship in a deeper direction, lead.
three, do not expect a relationship to always be about deep mutual discovery and profound conversation. I am 27, my GF is 29 and most of the time we will just chat about funny silly stuff and tease each other. there are deeper moments, of course. but I do not think I know everything about her, and I am sure she does not know everything about me. when I feel the need or desire to tell her something intimate about me, I just do. and I assume it's the same for her. but it does not have to happen all the time every time. make your girl happy, keep her well-sexed, do not rush things, and she will slowly open up more and more as time passes and you feel more comfortable around each other.
