Had a crazy few days so didn't write much up, but some good people to look at would be Tim Wall and Simon Frith (especially performing rites). They talk about semiotics which I see as an unintentional form of anchoring, which can also change peoples states depending on the connotations they hold to the piece. For example my heart will go on (from titanic) is massively played at funerals so puts a lot of people in that state.

However for a more deliberate type of NLP in music you would probably have to look into matching state and leading it, for example a building album getting faster or slower. Also the way the brain doesn't interpret full stops or negatives. ("Don't you want me baby").

I will put more thought into this at a later date, I also think flypapermeems has looked into some similar things.

Also I am away from home SPAM but if you fancy and essay on dominance within a club through performance and dancing just ask.
